Spanish Rice
I've always been afraid to make this on my own and bought the ready to make box. But I finally gave it a try and this recipe is delish!Ingredients
- 2 tablespoons vegetable oil
- 1 cup uncooked white rice
- 1 onion, chopped
- 1 clove garlic
- 1/2 green bell pepper, chopped
- 2 cups chicken broth
- 1 (10 ounce) can diced tomatoes and green chiles
- 2 teaspoons chili powder, or to taste
- 1 teaspoon salt
- 1/2 teaspoon cumin
Directions
- Heat oil in a deep skillet over medium heat. Saute garlic, onion, and bell pepper until tender, add rice and cook until rice is browned.
- Stir in broth and tomatoes. Season with chili powder, cumen and salt. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.
